Transformaciones en el comercio de trigos a mediados del siglo XIX y su repercusión en la molienda tradicional guipuzcoana

Abstract

This article approaches the conditions and factors that explain the crisis in flours and wheat in the Cantabria region towards the middle of the nineteenth century, as well as the emergence of the Basque Country in general and Guipúzcoa in particular in this fundamental sector of the Spanish economy. The beginnings of the railway and the advances made in shipping at that time were the main elements contributing to the growth and modernization of the flour sector that radically changed traditional milling in Guipúzcoa. Thus, the new flour industry became one of the most important sub-sectors of Basque industrialization.
